Georgians create these cylindrical candies by threading walnuts or hazelnuts—and occasionally fruit such as raisins or dried peaches or plums—along a string. Then, they repeatedly dip the strand in a mixture of concentrated grape juice and flour, building up layers of thick, waxy fruit syrup. After about five days of air-drying, the finished product has a lengthy shelf life.
Soldiers relied on sticks of the well-preserved, compact candy when entering battle. The high-calorie treat’s reputation as an energy source earned it the Western nickname “Georgian Snickers bar.”

Khachapuri, Georgian bread stuffed with melting cheese, eggs and butter, is one of the most famous Georgian dish. It comes in many varieties, most regular is Imeretian with a round shape, also Megrelian with some cheese added over, but the top dish of Georgian cuisine which foreign tourist must try is definitely Adjarian Khachapuri (Acharuli). Acharuli is the one where dough is formed into an open boat shape and is topped with a raw egg and butter before serving. Originally coming from Adjara, which is seaside region, it has a form of boat from the black sea – and egg over it is the symbol of the sun going down in the sea.

Traditionally mushrooms with cheese Sulguni are baked in shallow round red clay pots, which are called “ketsi.” They are used to make many baked Georgian dishes, such as another personal favorite, Shkmeruli, Chicken Baked in milk/or fat cream with garlic.
