Quick Breakfast Spread with Fruit Recipe:

🥄2 tbs dairy-free Plainly Classic Vegan Cream Cheese from @miyokoscreamery 🥄1.5 tsp organic maple syrup
🥄Dash of cinnamon
Directions: Mix all ingredients in a small bowl until well combined and creamy.

Toppings:
🍑 Organic peach slices with sprouted pumpkin seeds
🍓Organic strawberries sprinkled with fresh thyme
Drizzle some maple syrup on top. Enjoy!

“DRINKING WATER IS BORING!” 😅

Announced my 4 year old when I reminded him like 26th time today to drink his water. 🙈
⠀
Do you also think drinking water is boring? It doesn’t have to be if you flavor your water naturally with ingredients you already have in your fridge!
⠀
Here are my favorite all natural water flavoring combos:
⠀
💧H2O 1 liter (about 34oz) + 4-5 slices fresh lemon + 5-6 slices fresh cucumber + few fresh mint leaves
⠀
💧H2O 1 liter + 4-5 slices fresh lemon + handful of fresh raspberries + few sprigs of fresh rosemary
⠀
💧H2O 1 liter + 2 slices fresh grapefruit + 2-3 sprigs of fresh rosemary + pinch of Himalayan salt (did you know that salt intensifies grapefruit sweetness? 😉)
⠀
💧H2O 1 liter + ½ cup fresh or frozen pineapple + 3-4 sliced strawberries, few fresh basil leaves
⠀
💧H2O 1 liter + 4-5 slices fresh lemon + 3-4 slices fresh ginger, dash of ground cinnamon, dash of ground nutmeg.
⠀
The last one is also my favorite to drink as a warm tea on an empty stomach first thing in the morning. Just use 2-3 slices of lemon and 2 slices of ginger to make one cup (10-12oz) add a dash of cinnamon and nutmeg, pour hot water over it, let steep for 5 minutes. Enjoy while warm!

It’s Saturday and you are about to make your favorite taco recipe when you realize you are out of taco seasoning. 😱 But instead of rushing to the supermarket just make a perfect seasoning blend at home! 😉👌

Did you know that most commercial pre-mixed seasonings are:
⠀
🚫high in sodium
🚫contain sugar or other sweeteners
🚫contain anti-caking agents, and flavor enhancers like MSG🤢
⠀
👉These additives may trigger hunger hormone, increase appetite and make you eat more than you actually need to!
⠀
I buy individual dry herbs in small batches at international markets or online and blend my own seasonings. Here’s one of my favorite seasoning recipes:

TACO SEASONING (SODIUM FREE)
⠀
1 tbs. chili powder
2 tsp. ground cumin
1 1/2 tsp. garlic powder
1 tsp. dried oregano
¾ tsp. onion powder
½ tsp. cayenne pepper
¼ tsp. freshly ground black pepper
⠀
DIRECTIONS: Process all spices in a coffee grinder by pulsing it a few times until well blended. Don’t have the coffee grinder? Mix all ingredients in a ziploc bag, gently remove all air from the bag and close it without letting any air back in, place the bag on a counter, cover with a kitchen towel and gently pound on the bag with a flat side of a meat tenderizing hammer. Shake the bag to blend.

Did I confuse you? Let me clear the air. People have been asking whether I’m a vegan, vegetarian, pescatarian or if I eat any dairy, eggs or meat 🤪?

At this point of my life I do not follow any dietary restrictions simply because I don’t like diets 🥴 and boundaries that come with them 🙅♀️. I also know that psychologically diets can have the opposite impact on some people. Let me explain.

Personally, I have tried it all! Yes, even raw vegan diet, which was a fun experiment I did one summer. But first I have to stay true to myself and admit that I’m a foodie who also loves to cook and has a great passion for travel. 🌎✈️⛵️

I know I will be tempted to try something new on my travels! How can I say no to the Boulette d’Avesnes when in France (even though I have dairy sensitivity 🙈), red curry soup in Thailand (which I’m sure comes with some kind of meat), spatzle in Bavaria which, by the way, they make using beer instead of water 🍺, Shabu Shabu in Japan, beignets, gumbo or jambalaya in NOLA! 🤤🤤🤤 Life would be pretty boring, wouldn’t it?

Most of my cooking and recipes that I share are plant-based simply because I believe that plants should be the basis for any diet. Period! And my goal is to break the common belief that veggies are boring and you can’t make them taste good. I’m on a mission to prove those misbelievers wrong 😉!

To all the mothers out there HAPPY MOTHER’S DAY! Know that you are a true Superhero and whether you realize it or not you are also the essential worker for your family. With all the things you already do, these days you are also a teacher, personal assistant, hair stylist, private chef on demand, baker, arts and crafts wizard, entertainer, dance instructor, hand washing patrol, conflict resolution specialist and the list goes on...

🍣 Wild Salmon. Besides being rich in ani-inflammatory Omega-3, salmon is a great source of vitamin B12, essential for blood and nervous system. Don’t like fish? Take high quality Omega-3 supplement from sustainably sourced mercury-free fish. Remember to check with your doctor first on dosage appropriate for you. 🥦Broccoli. Loaded with fiber, minerals and vitamins broccoli will help you stay satiated longer, be more regular and reduce bloating. Buy organic whenever you can.

🍫Chocolate. And I’m talking about the real chocolate, containing at least 70% or more dark cocoa. Sorry, M&Ms won’t cut it 🤢. Natural dark chocolate is rich in flavonoids, antioxidants beneficial to your heart health. We made it through yet another week. I don’t even count anymore...
It makes me think more and more about our future. Will things ever be normal again? Today we participated in a social distancing birthday car parade for one of our neighbor’s kids. A thought crossed my mind are we ever going to be able to celebrate birthdays surrounded by our friends and family? Are we ever going to be able to buy groceries without wearing masks and feeling awkward and weird if someone gets too close to us? How will we get back to work and send our children to school? Will children be able to do their favorite after school activities, attend camps or go to someone else’s house for sleepovers? Will we ever get to do fun things we used to do? Go to amusement parks, zoos, movie theaters, restaurants, beaches? Create new memories? Travel?! I don’t know the answers to these questions and I guess nobody knows for sure.

For now we just improvise while still adjusting to new normal for however long we have to do this and try to do whatever brings us some joy, peace and happiness! #smellingspringflowers ⠀
